French toast

French toast will always signify a slow Sunday’s morning where an indulgent breakfast is calling to be enjoyed. The way to achieve this is to make your egg mixture the night before and leave the bread slices to soak up the batter overnight. I place them snugly into a shallow dish and pour the mixture all over. Try to avoid doing a quick dip into the batter if you can! I also like to fry my French toast in a skillet with lots of butter with just a drizzle of olive oil to ensure the butter does not burn.

If you are feeling particularly indulgent, you can use a brioche loaf for the bread however, a white sourdough works just as well. The great thing about a classic french toast recipe is that you can cater the toppings however you please. My favourite topping is maple syrup and strawberries, raspberries or blueberries but chocolate, a dusting of powdered sugar, pinch of salt and even condensed milk works just as well!

Why do you soak the bread overnight?

By leaving the bread to soak overnight, you are allowing the liquid to be fully absorbed by the bread. It also deepens and enhances the flavour and ensures a soft and custard like centre. Make sure you lay them in a single layer and flip them to ensure the bread is evenly soaked.

Do you have to soak the bread overnight?

Ideally it’s best if you can soak the bread in the french toast batter overnight however, if this cannot be done I suggest leaving it soak for a minimum of 30 minutes to 1 hour. As we want that custard like middle, cut very thick slices of bread.

What kinds of bread do yourecommend I use?

Traditionally a brioche loaf is used and considered the best bread to use yet I find this type of bread hard to source so resort to a thick white sourdough loaf. You could also used challah or even croissants! Day-old bread also works much better than fresh bread as it will hold its shape when fried.

What is brioche bread?

Brioche is a French bread /pastry that resembles bread. It is made with lots of eggs, milk and butter.

What should I top my French Toast with?

This is entirely up to you! I like to use fresh strawberries and maple syrup as my toppings.
