Basic homemade waffle mix recipe (1)

I haven’t made a lot of waffles in my days – I’d much prefer an egg. But this recipe, might just convince me otherwise. I was looking for a basic make-at-home waffle mix, because my kids and my husband love waffles. I didn’t want anything fancy, just something that was good, easy, wholesome and not Bisquick or Eggos. This would be it. I also appreciate that it’s made with real butter and not vegetable oil – I think it makes a huge difference in taste. And when I say it’s made with butter – it’s MADE with butter. In fact there is so much butter, I think they’d be more aptly named buffles. . .and good buffles they are!

The recipe is courtesy of The Joy of Cookingwhich you can find over on Amazon!

INGREDIENTS

1 3/4 cup flour, all-purpose

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

3 eggs

1/4 cups to 1 cup (1/2 to 2 sticks) butter, melted
Use only 1/4 cup if you’re looking for a “reduced-fat” version – and if you’re looking for a crunchier, more flavor-filled waffle go for the gusto with 1 cup. I compromised and used 1/2 cup (1 stick). Basically – the more butter, the crunchier.

1 1/2 cups milk

DIRECTIONS

1.) Preheat your waffle iron. (Waffle iron deals on AmazonBasic homemade waffle mix recipe (2))

2.) In one bowl, mix together all the dry ingredients (flour, baking powder, sugar and salt). In another bowl, whisk together eggs, butter and milk.

3.) Make a little well in the dry ingredients. Pour in wet ingredients. Whisk!

4.) Don’t whisk too much. Just enough to combine ingredients. It might look a little lumpy, that’s okay.

5.) Follow the instructions for your waffle iron. I use a measuring cup to scoop batter onto waffle maker. Then it beeps when it’s cooked. 🙂 It’s pretty easy.

6.) Top with any number of things – more butter, syrup, strawberries, whip cream, blueberries. . .

My family’s favorite waffle recipe (this is the half recipe, makes about 4 waffles in my round cooker):
Microwave 1 stick (1/2 cup) of margarine in a 2-cup glass measuring cup
    Add 1 cup whole milk
Separate 2 egg; yolks into the measuring cup with milk, whites into a small mixing bowl
Beat egg whites with a hand mixer until stiff peaks form (about 2 minutes), set aside
In a large mixing bowl, loosely combine 1 cup flour, 2 tsp baking powder, 1/2 tsp salt, and up to 2 Tbsp sugar (as you can see by the whole milk we don’t cut back on calories much, but how many days a week do you make ’em?)
Stir milk enough to break up the egg yolks, then pour into dry ingredients and stir until no longer lumpy.
This is where I tell you to “gently fold in egg whites, so they don’t lose the bubbles” but really I just stir it around until it’s pretty well combined…
Pour almost 1 cup into pre-heated greased waffle iron. Mine has a light that’s supposed to say when it’s done, but the best rule of thumb is: when the steam stops, they’re done.
If you double the recipe and have leftovers, store in zip top bags in the freezer and pop them in the toaster to re-heat. (My toaster will fit half a waffle in each side, so I often break them in half before freezing.) You can also add 1 tsp vanilla if you wish, but we don’t notice when I forget it (so I save vanilla for cookies and cakes instead).
One more time, the ingredients list is:
    1 stick butter
    1 cup whole milk
    2 eggs
    1 cup flour
    2 tsp baking powder
    1/2 tsp salt
    2 Tbsp sugar

    Enjoy!

I make waffles a couple times a month for DINNER! It is a great way to feed the family and have something yummy too. Our fav toppings include home made “maple” syrup, made from Mapline flavoring (tastes great and very thrifty). Other favs include: applesauce, peanut butter and sliced strawberries. My recipe is from the Betty Crocker Cookbook and is very similar to yours.

My mother used, “The joy of cooking”, recipe too and she would put some of the bacon fat into the batter as well. So yummy! Thanks for sharing!
